Backup large server to smaller external drives?

I am trying to find a good solution to back up a server that has a lot of static data (~40TB) stored on a drive array. The only good solution I've found requires backing this up to a drive array that presents a big enough volume. Is there a way with Backup Assist to use say five 8TB USB drives to back it up, and then follow with additional drives to back up new data periodically? If not, can this be done with LTO tapes? Veeam for example requires that I run a backup job first to disk, and then copy it to tape after. That's obviously not practical here. We're not talking mission critical data, I just want an archival copy in case the drive array fails.
